Ingredients
  

  • 12 noodles lasagna
  • 3 cups cooked chicken shredded
  • 2 cups Alfredo sauce
  • 2 cups ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • 1 ½ cups shredded parmesan cheese
  • 2 large eggs
  • 2 cups spinach chopped (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • Fresh parsley for garnish (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large pot of salted boiling water, cook lasagna noodles according to package instructions until al dente. Drain and set aside.
  • In a mixing bowl, combine ricotta cheese, eggs, garlic powder, onion powder, and a pinch of salt and pepper. Mix until smooth.
  • In a skillet over medium heat, combine shredded chicken and Alfredo sauce. Stir until heated through.
  • Assemble the lasagna by spreading a thin layer of the chicken Alfredo mixture on the bottom of the baking dish.
  • Layer 3 lasagna noodles over the sauce. Spread a third of the ricotta mixture on top and sprinkle with ½ cup of mozzarella and parmesan cheese.
  • If using spinach, layer half of it over the cheese. Repeat layering process twice more, finishing with a final layer of noodles topped with remaining chicken Alfredo sauce and the rest of the mozzarella and parmesan cheese.
  • Cover the baking dish with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 20 minutes or until the cheese is bubbly and golden.
  • Let the lasagna cool for 10-15 minutes before slicing. Garnish with fresh parsley, if desired, before serving.

Notes

You can substitute cooked rotisserie chicken for convenience.
Feel free to add vegetables like mushrooms or zucchini for added nutrition.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
