Ingredients
  

  • 9 lasagna noodles no-boil or regular
  • 2 cups cooked chicken shredded
  • 2 cups Alfredo sauce store-bought or homemade
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach optional
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste unit salt
  • to taste unit pepper
  • for garnish unit fresh parsley optional

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • If using regular lasagna noodles, cook them according to package instructions, then drain and set aside.
  • In a mixing bowl, combine the ricotta cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until smooth.
  • Spread a thin layer of Alfredo sauce on the bottom of the baking dish to prevent sticking.
  • Place 3 lasagna noodles in a single layer over the sauce.
  • Spread half of the ricotta mixture over the noodles.
  • Layer half of the shredded chicken on top, followed by a handful of spinach if using.
  • Pour 1 cup of Alfredo sauce over the chicken and spinach, then sprinkle with 1 cup of mozzarella cheese.
  • Repeat the layering process with another 3 lasagna noodles, remaining ricotta mixture, chicken, spinach, Alfredo sauce, and 1 cup of mozzarella cheese.
  • Top the final layer of noodles with the remaining Alfredo sauce and sprinkle with Parmesan cheese.
  • Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
  • Let the lasagna cool for 5-10 minutes before slicing into servings. Garnish with fresh parsley if desired.

Notes

For added flavor, you can sauté the spinach in a skillet before layering it into the lasagna.
This dish can be prepared a day in advance and refrigerated before baking. Just add a few extra minutes to the cooking time if baking from cold.
Leftovers can be stored in an airtight container in the refrigerator for up to three days.
