Ingredients
  

  • 2 cups uncooked penne pasta
  • 1 pound boneless, skinless chicken breasts, cubed
  • 2 cups fresh broccoli florets
  • 2 cups Alfredo sauce store-bought or homemade
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • to taste salt and pepper
  • 1 teaspoon Italian seasoning optional

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large pot, boil salted water and cook the penne pasta according to package instructions until al dente. Drain the pasta and set it aside.
  • In the same pot, add olive oil over medium heat. Add the cubed chicken and minced garlic, seasoning with salt, pepper, and Italian seasoning. Cook until the chicken is no longer pink, about 5-7 minutes.
  • Add the broccoli florets to the pot for the last 3 minutes of cooking the chicken to slightly steam them. Drain any excess liquid if necessary.
  • In a large mixing bowl, combine the cooked pasta, chicken, broccoli, Alfredo sauce, and half of the mozzarella and Parmesan cheeses. Mix well to ensure everything is evenly coated.
  • Transfer the mixture into a greased 9x13 inch baking dish. Spread it out evenly and top with the remaining mozzarella and Parmesan cheeses.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes

You can customize this recipe by adding other vegetables like bell peppers or spinach.
For a lighter version, you can use whole wheat pasta and reduced-fat cheeses.
This dish can be prepared ahead of time and stored in the refrigerator. Just add about 10 additional minutes to the baking time if cooking from cold.
