Ingredients
  

  • 2 cups cooked chicken breast, shredded or diced
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup lettuce, shredded e.g., romaine or iceberg
  • ½ cup Greek yogurt or mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • 4 large whole wheat tortillas
  • cilantro or spinach for garnish (optional)

Instructions
 

  • In a mixing bowl, combine the shredded chicken, diced avocado, halved cherry tomatoes, and shredded lettuce.
  • In a separate small bowl, mix the Greek yogurt or mayonnaise, lime juice, garlic powder, salt, and pepper to create a creamy dressing.
  • Pour the dressing over the chicken and vegetable mixture and gently toss to combine, ensuring everything is well coated.
  • Warm the whole wheat tortillas in a large skillet over medium heat for about 30 seconds on each side or until pliable.
  • Place a generous portion of the chicken and avocado mixture in the center of each tortilla.
  • Roll the tortillas tightly from one end to the other, folding in the sides as you go to secure the filling.
  • Slice each wrap in half and serve immediately on plates, garnished with cilantro or spinach if desired.

Notes

You can add other vegetables such as bell peppers or cucumbers for extra crunch.
This wrap can also be prepared in advance; just wrap tightly in plastic wrap and store in the refrigerator.
For a spicier version, add sliced jalapeños or a dash of hot sauce to the filling.
