- 1.5 lbs boneless, skinless chicken breasts about 3-4 pieces
- 2 cups cooked rice white or brown
- 1 can cream of chicken soup (10.5 oz)
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Place the chicken in the skillet and cook for about 5-7 minutes on each side until cooked through. Remove from heat and let cool slightly.
