Preheat the grill or grill pan over medium heat.
In a mixing bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breasts and coat them thoroughly.
Grill the chicken for about 6-7 minutes per side or until cooked through and internal temperature reaches 165°F (75°C). Remove from the grill and let rest.
While the chicken is cooking, preheat the oven to 400°F (200°C).
On a baking sheet, toss the diced zucchini, bell pepper, and carrot with olive oil, Italian herbs, salt, and pepper. Spread them out in a single layer.
Roast the vegetables in the oven for 20 minutes, or until they are tender and lightly caramelized.
While the vegetables are roasting, rinse the quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and the water is absorbed.
Once cooked, fluff the quinoa with a fork and set aside.
Slice the grilled chicken breasts into strips.
In food storage containers, divide the quinoa, the roasted vegetables, and the sliced chicken equally into 4 portions.
