Ingredients
  

  • 1 lb boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 1 bell pepper sliced (red or green)
  • 1 bell pepper sliced (yellow or orange)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups cooked rice (white or brown)
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • ½ cup shredded cheddar cheese
  • ¼ cup fresh cilantro chopped
  • 1 avocado sliced
  • as needed lime wedges for serving
  • optional salsa, sour cream, or hot sauce for topping

Instructions
 

  • Prepare all the ingredients by slicing the chicken breast into thin strips and chopping the onion and bell peppers.
  • In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers, sautéing for about 5 minutes until soft.
  • Push the vegetables to the side of the skillet and add chicken strips. Sprinkle chili powder, cumin, garlic powder, salt, and black pepper over the chicken. Cook for 7-10 minutes until fully cooked.
  • While the chicken is cooking, prepare the rice according to package instructions. Fluff the rice with a fork and set aside once ready.
  • Once the chicken and vegetables are cooked, reduce heat and add black beans, corn, and diced tomatoes to the skillet. Stir and cook for an additional 3-4 minutes until heated through.
  • To assemble the burrito bowls, start with a base of rice in each bowl, top with the chicken fajita mixture, and sprinkle with cheddar cheese, chopped cilantro, and avocado slices.
  • Serve with lime wedges and optional toppings such as salsa, sour cream, or hot sauce.

Notes

Feel free to customize by adding other toppings such as jalapeños or additional vegetables. This dish keeps well in the fridge for up to three days, making it great for meal prep. Adjust the spices according to your preferences for heat and flavor.
