Preheat the oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 7-8 minutes.
Add the sliced onion and bell peppers to the skillet. Sauté until the vegetables are tender, about 5-6 minutes.
Stir in the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for another minute until fragrant.
In a large bowl, combine the cooked chicken and vegetable mixture with black beans, corn, diced tomatoes, and 1 cup of shredded cheese. Mix well to combine.
In an oven-safe casserole dish, spread half of the tortilla strips at the bottom. Pour the chicken mixture over the tortillas, then top with the remaining tortilla strips and the rest of the cheese.
Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and golden.
Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro if desired before serving.
