- ½ cup olive oil
- ¼ cup lemon juice About 2 lemons.
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 2 teaspoons dried thyme
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 4 boneless, skinless chicken breasts About 1.5 to 2 pounds.
In a mixing bowl, combine the olive oil, lemon juice, minced garlic, oregano, thyme, salt, pepper, and paprika. Whisk until well blended.
Place the chicken breasts in a Ziplock bag or a shallow dish. Pour the marinade over the chicken, ensuring that each piece is well coated.
Seal the bag (or cover the dish) and refrigerate for at least 30 minutes, preferably 2 to 4 hours for maximum flavor.
Preheat your grill to medium-high heat or your oven to 400°F (200°C).
Remove the chicken from the marinade, allowing the excess to drip off. Discard the leftover marinade.
Grill the chicken for 6-7 minutes on each side, or bake in the oven for 20-25 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Remove the chicken from the heat and let it rest for 5 minutes before slicing to serve.
For extra flavor, consider adding fresh herbs like basil or parsley to the marinade.
