  • 1 mixing bowl
  • 1 tongs

  • 1 measuring cups and spoons

Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 4 whole whole wheat pita breads
  • 1 cup chopped romaine lettuce
  • 1 cup diced tomatoes
  • ½ whole cucumber, sliced
  • ½ whole red onion, thinly sliced
  • ½ cup tzatziki sauce store-bought or homemade

Instructions
 

  • Preheat the grill pan or outdoor grill over medium heat.
  • In a mixing bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breasts and coat them evenly with the marinade.
  • Once the grill is hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for a few minutes.
  • While the chicken is resting, prepare the pitas by slicing them in half to create pockets.
  • Thinly slice the grilled chicken into strips.
  • To assemble, fill each pita pocket with the sliced chicken, chopped romaine lettuce, diced tomatoes, cucumber slices, and red onion.
  • Drizzle tzatziki sauce inside each pita before serving.

Notes

Feel free to customize the fillings based on your preference. Grated carrots, bell pepper, or avocados make great additions.
If you prefer a spicy kick, add jalapeños or a drizzle of hot sauce.
These chicken pitas can be served warm or cold, making them great for meal prep.
