Ingredients
  

  • 12 oz pasta Penne or your favorite shape.
  • 1 lb chicken sausages Casings removed.
  • 2 medium zucchinis Sliced.
  • 2 cups cherry tomatoes Halved.
  • 3 cloves garlic Minced.
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh basil Chopped (optional).
  • Grated Parmesan cheese for serving Optional.

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a skillet over medium heat, add olive oil. Once hot, add the chicken sausages, breaking them up with a wooden spoon. Cook until browned, about 5-7 minutes.
  • Add the minced garlic to the skillet and cook for 1 minute until fragrant.
  • Stir in the sliced zucchini and cook for about 5 minutes until they are tender.
  • Add the halved cherry tomatoes, oregano, salt, and black pepper. Cook for another 5 minutes until the tomatoes soften.
  • Combine the cooked pasta with the sausage and vegetable mixture. Toss to combine evenly.
  • If desired, garnish with fresh basil and serve with grated Parmesan cheese on top.

Notes

You can substitute chicken sausages with turkey or plant-based sausages for a different flavor.
Feel free to add other vegetables like bell peppers or spinach for added nutrition.
