- 12 oz pasta Penne or your favorite shape.
- 1 lb chicken sausages Casings removed.
- 2 medium zucchinis Sliced.
- 2 cups cherry tomatoes Halved.
- 3 cloves garlic Minced.
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup fresh basil Chopped (optional).
- Grated Parmesan cheese for serving Optional.
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
In a skillet over medium heat, add olive oil. Once hot, add the chicken sausages, breaking them up with a wooden spoon. Cook until browned, about 5-7 minutes.
