- 1 pound boneless, skinless chicken breasts
- ¼ cup olive oil
- 3 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 tablespoon lemon juice
- ¼ teaspoon red pepper flakes optional
- Fresh parsley, chopped for garnish
Cut the chicken breasts into 1-inch cubes and place them in a mixing bowl.
In a separate bowl, combine the olive oil, minced garlic, salt, black pepper, Italian seasoning, lemon juice, and red pepper flakes. Mix well to create a marinade.
Pour the marinade over the chicken cubes and toss to coat evenly. Cover and refrigerate the marinated chicken for at least 15 minutes, or up to 2 hours for more flavor.
Preheat the grill or grill pan over medium-high heat and lightly oil the grill grates.
Thread the marinated chicken pieces onto the skewers, leaving a bit of space between each piece.
Grill the skewers for about 6-8 minutes on each side, or until the chicken is fully cooked and has nice grill marks. The internal temperature should reach 165°F (75°C).
During the last minute of cooking, sprinkle the grated Parmesan cheese over the skewers and allow it to melt slightly.
Remove the skewers from the grill and let them rest for a few minutes. Garnish with chopped fresh parsley before serving.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
Serve these skewers with a side of grilled vegetables or a fresh salad for a complete meal.
