  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice or juice from half a lemon
  • 1 tablespoon fresh chopped parsley
  • 2 teaspoons minced garlic
  • ¾ teaspoon salt for seasoning
  • ¼ teaspoon cracked black pepper
  • 28 ounces chicken tenders
  • 1 cup Panko breadcrumbs
  • ½ cup regular seasoned breadcrumbs
  • 1 teaspoon mild paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ cup fresh grated parmesan cheese

  • Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper or grease it lightly.
  • In a shallow bowl, whisk together egg, olive oil, lemon juice, parsley, garlic, salt, and pepper.
  • Coat chicken tenders in the marinade and let rest for 10 minutes.
  • In a separate bowl, mix together Panko breadcrumbs, seasoned breadcrumbs, paprika, garlic powder, onion powder, and parmesan.
  • Dredge each tender in the breadcrumb mix and press lightly to coat.
  • Place coated tenders on the baking tray in a single layer.
  • Bake for 25 to 30 minutes, flipping halfway through until golden and cooked through.
  • Serve warm with side of choice.

Notes

For extra crispness, broil the tenders for 2-3 minutes at the end or use your air fryer to bring the coating back to life when reheating.
