  • 10 oz Chocolate graham crackers crushed fine for the crust
  • ½ cup Unsalted butter melted
  • ¼ cup Granulated sugar to sweeten the base
  • 3 bricks Cream cheese 8 oz each
  • 1 cup Dark brown sugar adds depth
  • 1 cup Whole milk ricotta cheese for smooth texture
  • cup Dark cocoa powder or regular cocoa powder if preferred
  • ½ teaspoon Espresso powder optional
  • ½ cup Heavy whipping cream whipped
  • cup Semi sweet chocolate chips
  • 1 Zest from orange for bright flavor
  • 3 Eggs large

  • Preheat oven to 325°F.
  • Blend graham crackers in a food processor to create fine crumbs.
  • Add melted butter and granulated sugar to crumbs and pulse to combine.
  • Press mixture into a springform pan and bake for 10 minutes. Cool completely.
  • In a large bowl, beat cream cheese until smooth, then mix in dark brown sugar until blended.
  • Add ricotta, cocoa powder and espresso powder; beat mixture completely.
  • Whip cream to soft peaks and gently fold into the mixture for a light texture.
  • Stir in chocolate chips and orange zest.
  • Pour filling over cooled crust and smooth the top.
  • Bake for 50–60 minutes until center is mostly set. Turn off oven, crack door and let cool for 1 hour.
  • Refrigerate for at least 4 hours or overnight for best results.

Notes

Wrap cheesecake tightly before refrigerating to retain moisture. Freeze extra slices wrapped in foil individually. Let frozen cheesecake thaw at room temperature for best texture.
