Instructions
Bring water, butter, sugar, and salt to a rolling boil in a saucepan. Remove from heat.
Stir in all the flour immediately until the dough forms and pulls away from the sides.
Let dough cool 5 minutes, then beat in eggs one at a time. Stir in vanilla extract until glossy.
Transfer dough into a piping bag with a large star tip.
Heat vegetable oil in a deep pot to 375°F (190°C).
Pipe 4–6 inch strips into hot oil, cutting with scissors as needed.
Fry 2–3 minutes per side until golden brown. Remove and drain on paper towels.
Immediately roll churros in prepared cinnamon sugar mixture.
Heat chocolate chips and cream in a bowl over simmering water until smooth. Stir in cinnamon.
Serve churros hot with chocolate sauce for dipping.
Notes
Use a candy thermometer for frying! Watch closely, drain on paper towels, and roll churros in cinnamon sugar while hot for best results.
