Preheat your oven to 375 F and line a baking sheet with parchment paper.
Peel, core, and dice your apples into small chunks.
Melt butter in a skillet on medium heat, then add diced apples, brown sugar, cinnamon, and salt. Cook for about 6 minutes until tender and caramelized. Let cool slightly.
Roll out your puff pastry on a floured surface to smooth creases.
Place the brie in the middle of puff pastry, top with apple mixture, chopped nuts, and maple syrup.
Fold the puff pastry over the filling, trim extra dough, and seal. Flip seam-side down.
Brush the top with maple syrup and sprinkle with raw sugar.
Bake for 25–30 minutes until golden and crisp.
Let cool 5–10 minutes before serving.
