Peel and dice apples into small chunks.
Cream butter with both sugars until light and fluffy.
Add egg and beat until combined.
In another bowl, whisk flour, cinnamon, baking powder, baking soda, and salt together.
Gently combine dry mixture with wet mixture; do not overmix.
Fold in diced apples evenly.
Grease the pressure cooker pan with oil or butter.
Pour batter into the pan, smooth top; add 1 cup water to bottom of cooker.
Cook on high pressure for 25 minutes, then natural release for 10 minutes.
Notes
For extra flavor, add a teaspoon of vanilla extract or chopped nuts. Use parchment lining for easier cleanup and reheating leftovers is easy with a little moisture.
