Preheat your oven to 375°F (190°C). Grease a baking sheet lightly so the bites don't stick.
Grab your cinnamon rolls and cut them into quarters. Set aside the icing packet for later drizzling.
Whisk eggs, milk, cinnamon, and vanilla together in a bowl until smooth and blended.
Dip each cinnamon roll piece in the egg mixture, making sure they get coated well on all sides.
Melt butter in a skillet on medium heat, then cook the roll pieces in batches. Let each side get golden brown, about 5 minutes total.
Once browned, place the bites on the prepared baking sheet and slide them into your oven.
Bake for about 10 to 12 minutes until the bites are cooked through and fluffy inside.
Warm the icing packet so it’s easy to drizzle.
Drizzle icing over the warm bites.
Serve immediately with maple syrup and enjoy warm!
