Ingredients
  

  • 1 cup cottage cheese about 240 grams
  • 1 cup all-purpose flour about 120 grams
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • 1 large egg
  • optional herbs or spices e.g., garlic powder, dried oregano for added flavor

Instructions
 

  • In a mixing bowl, combine the cottage cheese, egg, and olive oil. Use a fork or whisk to blend until smooth.
  • In a separate bowl, mix the flour, baking powder, and salt. If desired, add herbs or spices for extra flavor.
  • Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  • Turn the dough onto a floured surface and knead gently for about 1 minute until smooth.
  • Divide the dough into 4 equal portions. Roll each portion into a ball, then flatten it into a disc about ¼ inch thick using a rolling pin.
  • Preheat a non-stick skillet or griddle over medium heat.
  • Cook each flatbread for about 3-4 minutes on one side until golden brown, then flip and cook for an additional 3-4 minutes.
  • Remove from the skillet and let cool slightly before serving.

Notes

You can serve the flatbreads with various toppings such as hummus, avocado, or cheese.
Store any leftover flatbreads in an airtight container at room temperature for up to 2 days or refrigerate for longer storage. Reheat in a skillet before serving.
