Ingredients
  

  • 1 cup cottage cheese 240g
  • 1 large egg
  • 1 cup all-purpose flour 125g
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 tablespoon olive oil 15ml
  • optional fresh herbs (oregano, basil) or spices (garlic powder, onion powder) for flavor

Instructions
 

  • In a mixing bowl, combine the cottage cheese and egg. Mix until smooth and well blended.
  • Add the flour, salt, baking powder, and olive oil to the cottage cheese mixture. Stir until a dough forms.
  • If desired, add fresh herbs or spices for additional flavor, and mix well.
  • Turn the dough out onto a floured surface. Divide the dough into 4 equal portions.
  • Using a rolling pin, flatten each portion into a round flatbread about ¼ inch thick.
  • Heat a non-stick skillet or frying pan over medium heat. Once hot, add a flatbread to the pan.
  • Cook for about 3-4 minutes on each side, or until golden brown and cooked through.
  • Repeat the process with the remaining dough portions, adding more oil to the pan if necessary.

Notes

You can store any leftover flatbreads in an airtight container in the refrigerator for up to 3 days.
Great served warm with dips, toppings, or used as a wrap with your favorite fillings.
Feel free to experiment with whole wheat flour or gluten-free alternatives if needed.
