- 1 cup cottage cheese
- 1 cup all-purpose flour
- 1 large egg
- ½ teaspoon salt
- ½ teaspoon baking powder
- 1 tablespoon olive oil Plus more for cooking.
- herbs for seasoning (optional) e.g., oregano, basil.
In a mixing bowl, combine the cottage cheese, flour, egg, salt, and baking powder. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.
Lightly flour a clean surface and turn the dough out onto it. Knead for about 1 minute until smooth.
Divide the dough into 4 equal portions and shape each portion into a ball.
Using a rolling pin, roll each ball into a flat round shape about ¼ inch thick.
Heat a non-stick skillet or frying pan over medium heat. Add ½ tablespoon of olive oil to the pan.
Cook one flatbread at a time for about 3-4 minutes on each side, or until golden brown and cooked through. Repeat with the remaining flatbreads, adding more oil as needed.
Optionally, sprinkle herbs over the flatbreads while cooking to enhance the flavor.
Serve warm as a snack or with your choice of dip.
These flatbreads can be stored in an airtight container in the fridge for up to 2 days.
They can also be frozen for longer storage; just reheat them in a skillet when ready to serve.
Feel free to customize the flatbreads by adding spices or other ingredients you enjoy, such as garlic powder or chopped green onions.
