Ingredients
  

  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 1 large egg
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 tablespoon olive oil Plus more for cooking.
  • herbs for seasoning (optional) e.g., oregano, basil.

Instructions
 

  • In a mixing bowl, combine the cottage cheese, flour, egg, salt, and baking powder. Mix until a soft dough forms. If the dough is too sticky, add a little more flour.
  • Lightly flour a clean surface and turn the dough out onto it. Knead for about 1 minute until smooth.
  • Divide the dough into 4 equal portions and shape each portion into a ball.
  • Using a rolling pin, roll each ball into a flat round shape about ¼ inch thick.
  • Heat a non-stick skillet or frying pan over medium heat. Add ½ tablespoon of olive oil to the pan.
  • Cook one flatbread at a time for about 3-4 minutes on each side, or until golden brown and cooked through. Repeat with the remaining flatbreads, adding more oil as needed.
  • Optionally, sprinkle herbs over the flatbreads while cooking to enhance the flavor.
  • Serve warm as a snack or with your choice of dip.

Notes

These flatbreads can be stored in an airtight container in the fridge for up to 2 days.
They can also be frozen for longer storage; just reheat them in a skillet when ready to serve.
Feel free to customize the flatbreads by adding spices or other ingredients you enjoy, such as garlic powder or chopped green onions.
