Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 pound smoked sausage, sliced
  • 2 cans (15 ounces each) kidney beans, drained and rinsed
  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 cup barbecue sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté until softened, about 5 minutes.
  • Add the minced garlic and ground beef to the pot, cooking until the meat is browned and cooked through, about 7-10 minutes. Drain any excess grease.
  • Stir in the sliced smoked sausage, kidney beans, black beans, diced tomatoes (with their juices), barbecue sauce, chili powder, cumin, and smoked paprika.
  • Season with salt and pepper to taste. Mix everything well and bring to a simmer.
  • Reduce the heat to low and let the mixture simmer for about 45 minutes, stirring occasionally.
  • Taste and adjust seasoning if necessary before serving.

Notes

This dish can be made ahead of time and reheats beautifully.
Feel free to adjust the level of spice by adding more chili powder or hot sauce if desired.
Serve Cowboy Beans with warm cornbread or over rice for a complete meal.
