Ingredients
  

  • 2 cups cooked chicken, shredded or diced You can use rotisserie chicken to save time on cooking.
  • ½ cup mayonnaise For a lighter version, reduce the amount or use a lighter alternative.
  • ¼ cup plain Greek yogurt For a lighter version, reduce the amount.
  • ½ cup dried cranberries
  • ½ cup sliced almonds
  • ¼ cup green onions, chopped
  • 1 tablespoon Dijon mustard
  • to taste salt
  • to taste pepper
  • 8 slices whole grain bread or your choice of sandwich bread You can lightly toast the bread slices for added texture.
  • as needed leafy greens Optional, for serving.

Instructions
 

  • In a large bowl, combine the cooked chicken, mayonnaise, Greek yogurt, dried cranberries, sliced almonds, chopped green onions, and Dijon mustard.
  • Stir until all ingredients are well mixed. Season with salt and pepper to taste.
  • If desired, lightly toast the bread slices for added texture.
  • Spread an even layer of the chicken salad mixture onto four slices of bread.
  • Top with leafy greens if using, then cover with the remaining slices of bread.
  • Cut each sandwich in half diagonally and serve immediately.

Notes

You can use rotisserie chicken to save time on cooking.
For a lighter version, you can reduce the mayonnaise and Greek yogurt or use a lighter mayonnaise alternative.
Feel free to add additional ingredients like celery or grapes for added crunch and flavor.
