Ingredients
  

Cranberry Brie Bites Ingredients

  • 2 sheets Puff pastry thawed
  • 8 ounces Brie cheese cut into 24 small pieces
  • 1 cup Cranberry sauce whole, homemade or store-bought
  • 0.5 cup Chopped pistachios
  • 0.5 teaspoon Sea salt flakes I use Maldon
  • 4 sprigs Fresh rosemary chopped, for garnish

Preparation Steps

  • Preheat oven to 375°F and grease a mini muffin tin lightly.
  • Unfold puff pastry on a floured surface. Cut each sheet into 12 squares and press into muffin wells.
  • Cut brie into small chunks and place one piece in each pastry cup.
  • Top each with a spoonful of cranberry sauce and sprinkle chopped pistachios over the top.
  • Bake for 15–18 minutes until golden brown and fragrant.
  • Remove from oven and sprinkle sea salt flakes on top.
  • Let cool for 3–5 minutes, then garnish with chopped fresh rosemary.
  • Serve warm or at room temperature on a platter.

Notes

Use a metal muffin tin for better cooking results. Leave the rind on the brie when slicing. If it's too soft to cut, freeze the brie for 15–20 minutes.
