Spread a thin layer of butter on one side of each slice of bread.
Place four slices buttered side down and spread cranberry sauce on top.
Layer brie and mozzarella over the cranberry sauce.
Top with remaining bread slices, buttered side up.
Heat pressure cooker on medium and place sandwiches inside carefully.
Cook for 3 to 4 minutes on each side until golden brown.
Remove sandwiches and optionally sprinkle flaky salt on top.
Slice and serve immediately while hot and melty.
Notes
Wrap leftovers in foil and reheat in a skillet or use your pressure cooker’s low setting to recapture the crispiness.
