  • 8 slices sourdough bread or crusty bread
  • 0.25 cup cranberry sauce store-bought or homemade
  • 0.5 cup shredded mozzarella cheese to keep things melty
  • 4 ounces brie cheese thinly sliced
  • 2 Tablespoons unsalted butter softened to room temp for spreading
  • 0.5 teaspoon flaky sea salt optional for finishing touch

  • Spread a thin layer of butter on one side of each slice of bread.
  • Place four slices buttered side down and spread cranberry sauce on top.
  • Layer brie and mozzarella over the cranberry sauce.
  • Top with remaining bread slices, buttered side up.
  • Heat pressure cooker on medium and place sandwiches inside carefully.
  • Cook for 3 to 4 minutes on each side until golden brown.
  • Remove sandwiches and optionally sprinkle flaky salt on top.
  • Slice and serve immediately while hot and melty.

Notes

Wrap leftovers in foil and reheat in a skillet or use your pressure cooker’s low setting to recapture the crispiness.
