- 12 oz pasta fettuccine or penne
- 6 strips bacon about 6 oz / 170 g, chopped
- 8 oz mushrooms sliced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic minced
- 2 tablespoons olive oil
- to taste salt
- to taste freshly ground black pepper
- for garnish fresh parsley chopped
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the rendered fat in the pan.
In the same skillet, add the sliced mushrooms and cook until they are golden brown, about 5 minutes. Add the minced garlic and sauté for an additional minute.
Pour in the heavy cream, stirring to combine with the mushrooms. Bring to a gentle simmer, then reduce heat to low.
Gradually add the grated Parmesan cheese, stirring until melted and well combined. Season with salt and black pepper to taste.
Add the cooked pasta and crispy bacon back into the skillet. Toss gently until the pasta is coated with the creamy sauce.
Check the seasoning and adjust with more salt or pepper as needed.
Divide the pasta among serving bowls, garnish with chopped parsley, and enjoy!
Feel free to add spinach or peas for added veggies.
If you want a lighter version, substitute heavy cream with half-and-half or a lower-fat alternative, but keep in mind the texture will change slightly.
Store leftovers in an airtight container in the refrigerator for up to 2 days, but note that pasta may absorb the sauce. Reheat gently with a splash of water or additional cream.
