Ingredients
  

  • 12 oz pasta fettuccine or penne
  • 6 strips bacon about 6 oz / 170 g, chopped
  • 8 oz mushrooms sliced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • to taste salt
  • to taste freshly ground black pepper
  • for garnish fresh parsley chopped

Instructions
 

  • In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the rendered fat in the pan.
  • In the same skillet, add the sliced mushrooms and cook until they are golden brown, about 5 minutes. Add the minced garlic and sauté for an additional minute.
  • Pour in the heavy cream, stirring to combine with the mushrooms. Bring to a gentle simmer, then reduce heat to low.
  • Gradually add the grated Parmesan cheese, stirring until melted and well combined. Season with salt and black pepper to taste.
  • Add the cooked pasta and crispy bacon back into the skillet. Toss gently until the pasta is coated with the creamy sauce.
  • Check the seasoning and adjust with more salt or pepper as needed.
  • Divide the pasta among serving bowls, garnish with chopped parsley, and enjoy!

Notes

Feel free to add spinach or peas for added veggies.
If you want a lighter version, substitute heavy cream with half-and-half or a lower-fat alternative, but keep in mind the texture will change slightly.
Store leftovers in an airtight container in the refrigerator for up to 2 days, but note that pasta may absorb the sauce. Reheat gently with a splash of water or additional cream.
