Ingredients
  

  • 12 ounces spaghetti or fettuccine
  • 6 slices thick-cut bacon
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the spaghetti or fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water before draining the pasta.
  • While the pasta is cooking, chop the bacon into small pieces and add it to a frying pan over medium heat. Cook until crispy, about 5-7 minutes. Remove the bacon from the pan and set aside, leaving the rendered fat in the pan.
  • In the same frying pan, add olive oil and minced garlic to the bacon drippings. Sauté for about 1-2 minutes, until fragrant but not burnt.
  • Pour in the heavy cream and bring it to a gentle simmer. Reduce the heat to low and whisk in the grated Parmesan cheese until the sauce is smooth and creamy. If the sauce is too thick, gradually add some reserved pasta water until the desired consistency is achieved.
  • Add the cooked pasta into the sauce along with the crispy bacon. Toss everything together until the pasta is well coated in the creamy sauce. Season with salt and black pepper to taste.
  • Serve immediately, garnished with fresh chopped parsley.

Notes

You can add vegetables like spinach or peas for extra flavor and nutrition.
For a spicier version, consider adding red pepper flakes to the sauce.
