- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper diced any color
- 1 can (15 oz) diced tomatoes, undrained
- 1 cup heavy cream
- 1 cup grated Parmesan cheese

Cook the penne pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces and season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
