Ingredients
  

  • 12 oz penne pasta
  • 1 lb spicy sausage (e.g., andouille, sliced)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper diced (any color)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • In a large pot, cook the penne pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook for about 5 minutes, until browned.
  • Add the diced onion, garlic, and bell pepper to the skillet. Sauté for an additional 3-4 minutes until the vegetables are tender.
  • Stir in the diced tomatoes (with juice), heavy cream, Cajun seasoning, salt, and black pepper. Bring to a gentle simmer.
  • Once the sauce is heated through, add the cooked penne pasta to the skillet. Toss to combine, ensuring the pasta is well coated with the sauce.
  • Remove from heat, and stir in the grated Parmesan cheese until melted and incorporated. Adjust seasoning if needed.
  • Serve warm, garnished with chopped parsley.

Notes

For a milder flavor, use mild sausage and reduce the Cajun seasoning to taste.
This dish pairs well with garlic bread or a simple side salad.
Leftovers can be stored in the refrigerator for up to 3 days; reheat gently on the stove or in the microwave.
