- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breast, diced Can substitute grilled or rotisserie chicken for convenience.
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 pound potato gnocchi
- 1 cup heavy cream
- 2 cups fresh spinach, chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon Italian seasoning
- ½ cup grated Parmesan cheese
Heat the olive oil in a large skillet over medium heat. Add the diced chicken and cook for about 6-7 minutes, or until the chicken is no longer pink in the center. Stir occasionally to ensure even cooking.
Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
Pour in the chicken broth and bring the mixture to a gentle boil. Add the gnocchi and cook according to the package instructions, usually about 2-3 minutes or until they float to the top.
Once the gnocchi is cooked, reduce the heat to low and stir in the heavy cream, chopped spinach, salt, black pepper, Italian seasoning, and Parmesan cheese. Cook for another 3-4 minutes, stirring frequently, until the sauce is creamy and the spinach is wilted.
Taste and adjust the seasoning as needed. Remove from heat and let it sit for a minute before serving.
You can substitute grilled chicken, or rotisserie chicken for convenience.
For added flavor, consider tossing in some sun-dried tomatoes or mushrooms.
This dish can be made ahead of time and reheated; just add a splash of chicken broth if it thickens too much.
