- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 pound boneless, skinless chicken breasts, diced
- 6 cups chicken broth For added flavor, consider using homemade chicken broth.
- 1 cup long-grain white rice
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- to taste salt
- to taste pepper
- for garnish chopped fresh parsley Optional.
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent.
Stir in the minced garlic, diced carrots, and diced celery. Cook for an additional 5 minutes until the vegetables are slightly softened.
Add the diced chicken breast to the pot and cook for 5-7 minutes, stirring occasionally, until the chicken is browned on the outside.
Pour in the chicken broth and bring the mixture to a boil. Once boiling, add the rice, dried thyme, and dried oregano. Reduce the heat to low and cover the pot.
Simmer for 20 minutes, or until the rice is cooked and the chicken is tender.
Stir in the heavy cream and season with salt and pepper to taste. Heat through for another 5 minutes, stirring gently.
Remove from heat. Serve the soup hot, garnished with chopped parsley if desired.
For added flavor, consider using homemade chicken broth.
Feel free to add other vegetables such as peas or corn for extra nutrition.
Leftover soup can be stored in the refrigerator for up to 3 days, and it may thicken as it sits; you can add a little more broth or water when reheating to reach your desired consistency.
