Ingredients
  

  • 8 oz penne pasta
  • 2 tablespoons olive oil
  • 1 lb chicken breast, diced
  • 4 slices bacon, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions
 

  • Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain the pasta and set aside.
  • In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken breast and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the chopped bacon and cook until crispy, about 4-5 minutes. Add the minced garlic and sauté for about 1 minute, until fragrant.
  • Reduce the heat to medium-low and pour in the heavy cream and ranch seasoning mix. Stir well to combine and let it simmer for 2-3 minutes.
  • Add the cooked chicken back into the skillet along with the drained pasta. Toss until everything is well coated in the creamy ranch sauce.
  • Stir in the shredded cheddar cheese until melted and combined. Adjust seasoning with additional salt and pepper, if necessary.
  • Serve immediately, garnished with fresh parsley if desired.

Notes

You can substitute the chicken with cooked shredded rotisserie chicken for an easier option.
Feel free to add vegetables like spinach or broccoli to bulk up the dish.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
