  • 12 oz cavatappi pasta twisted pasta holds sauce great
  • 1 ½ lb boneless skinless chicken breasts cut into 1-inch cubes, patted dry
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoon unsalted butter divided
  • 2 teaspoon minced garlic
  • 2 tablespoon all-purpose flour
  • 1 ½ cups chicken broth
  • ½ cup heavy cream
  • 1 cup freshly grated parmesan cheese plus more for garnish
  • salt and pepper to taste
  • fresh parsley chopped, for garnish

  • Bring a large pot of salted water to a boil. Cook cavatappi according to package directions until al dente. Drain and set aside.
  • In a small bowl, mix salt, garlic powder, onion powder, paprika, and black pepper. Sprinkle the seasoning evenly over the chicken pieces.
  • In a large skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Add chicken and sear for 3–4 minutes per side until golden brown and cooked through. Transfer to a plate.
  • Reduce heat to medium. In the same skillet, add remaining butter and garlic. Sauté for 1 minute.
  • Stir in flour and cook for 1 minute, stirring constantly to form a roux.
  • Slowly whisk in chicken broth and heavy cream. Bring to a simmer and let thicken for 3–4 minutes, stirring often.
  • Remove from heat and stir in parmesan cheese. Season with salt and pepper to taste.
  • Add cooked pasta to the sauce and stir to coat. Add reserved chicken and mix to combine.
  • Garnish with fresh parsley and extra parmesan. Serve hot.

Notes

Store leftovers in airtight containers for 3–4 days or freeze in portions. Reheat gently to prevent sauce from breaking. Add veggies like spinach or mushrooms when reheating for a fresh twist.
