- 12 oz fettuccine or spaghetti
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream Can be substituted with half-and-half for a lighter option.
- 1 cup grated Parmesan cheese
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup fresh spinach Optional.
- 2 tablespoons chopped fresh parsley For garnish.
In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta using a colander and set aside.
In a skillet over medium heat, add the olive oil. Once heated, add the minced garlic and sauté for about 1 minute, or until fragrant (be careful not to burn it).
Reduce the heat to low and stir in the heavy cream. Let it simmer for about 3 minutes, stirring occasionally.
Gradually add the grated Parmesan cheese to the sauce, stirring continuously until melted and combined. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.
Season the sauce with salt and black pepper. If using spinach, add it to the sauce and continue cooking until wilted.
Add the cooked pasta to the skillet and toss gently to coat the pasta evenly with the creamy sauce.
Serve immediately, garnished with chopped parsley if desired.
