Heat olive oil in a large pot over medium heat. Add crumbled Italian sausage and cook until browned, breaking apart with a spoon.
Add minced garlic and Italian seasoning. Sauté for 1-2 minutes until fragrant.
Add chicken broth, heavy cream, and tomato sauce. Stir and bring to a simmer.
Add uncooked rigatoni to the pot. Stir well to coat the pasta.
Cover and cook on medium-low heat for 13-15 minutes, stirring occasionally to prevent sticking.
When pasta is cooked, do a quick release (if pressure cooked), then stir in fresh spinach. Cook 2-3 minutes until wilted.
Season with salt, pepper, and red pepper flakes to taste. Serve warm.
Notes
Store leftovers in an airtight container in the fridge for 3–4 days. For freezing, store without spinach and reheat with a splash of broth to refresh the sauce.
