Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 bell pepper, diced (any color)
  • 1 14-ounce can diced tomatoes
  • 1 14-ounce can white beans, drained and rinsed
  • 2 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon smoked paprika
  • to taste salt
  • to taste pepper
  • 1 cup coconut cream (or unsweetened cashew cream)
  • 2 cups fresh spinach (optional)
  • for garnish fresh basil or parsley (optional)

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until the onion becomes translucent.
  • Add the minced garlic, diced carrot, and bell pepper. Cook for an additional 5-7 minutes, stirring occasionally until the vegetables soften.
  • Stir in the canned diced tomatoes (with their juices), drained white beans, vegetable broth, dried oregano, dried basil, smoked paprika, salt, and pepper. Bring the mixture to a boil.
  • Lower the heat to a simmer and let the stew cook for 15-20 minutes, allowing the flavors to meld together. Stir occasionally and add more broth if needed to reach your desired consistency.
  • Once the stew is thick and flavorful, stir in the coconut cream (or cashew cream) and fresh spinach, if using. Cook for another 5 minutes until the spinach wilts and the stew is heated through.
  • Taste and adjust seasoning as necessary.
  • Serve hot in bowls, garnished with fresh basil or parsley if desired.

Notes

This stew can be stored in the refrigerator for up to 3 days or frozen for longer storage.
Serve with crusty bread or over rice for a heartier meal.
If you prefer a spicier stew, consider adding red pepper flakes or a chopped jalapeño with the vegetables.
