Stir in the minced garlic, diced carrots, and red bell pepper. Cook for an additional 5 minutes, until the vegetables start to soften.
Pour in the can of diced tomatoes (with juice), white beans, coconut milk, and vegetable broth. Stir well to combine.
Add the dried basil, dried oregano, and season with salt and pepper to taste.
Bring the mixture to a gentle boil, then reduce heat to low and let it simmer for about 15 minutes, stirring occasionally.
Taste and adjust the seasoning if necessary.
Serve the stew hot, garnished with fresh parsley if desired.
For extra flavor, you can add a splash of lemon juice before serving.
