Ingredients
  

  • 1 pound salmon fillet, skinned and cut into bite-sized pieces
  • 3 tablespoons honey Adjust sweetness to taste.
  • 2 tablespoons soy sauce
  • 1 tablespoon minced garlic
  • 1 teaspoon grated ginger (optional)
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • ½ cup panko breadcrumbs
  • 2 tablespoons vegetable oil, for frying
  • to taste green onions, sliced (for garnish)

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray it with non-stick spray.
  • In a mixing bowl, combine honey, soy sauce, minced garlic, grated ginger (if using), black pepper, and salt. Mix well to create the marinade.
  • Add the salmon pieces to the marinade, ensuring each piece is well coated. Let it marinate for at least 10 minutes.
  • While the salmon is marinating, place the panko breadcrumbs in a separate bowl.
  • Once marinated, take each piece of salmon and dip it into the panko breadcrumbs, pressing gently to ensure an even coating.
  • In a skillet over medium heat, add the vegetable oil. Once hot, add the breaded salmon bites in batches, ensuring not to overcrowd the pan. Cook until golden and crispy, about 2-3 minutes per side.
  • Alternatively, you can bake the salmon bites in the preheated oven for about 10-12 minutes, or until golden and cooked through.
  • Once cooked, remove the salmon bites from the skillet or oven and place them on a serving platter.
  • Garnish with sliced green onions and sesame seeds, if desired.
  • Keep the oven on warm if you need to cook in batches to ensure the salmon bites remain hot before serving.
