Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray it with non-stick spray.
In a mixing bowl, combine honey, soy sauce, minced garlic, grated ginger (if using), black pepper, and salt. Mix well to create the marinade.
Add the salmon pieces to the marinade, ensuring each piece is well coated. Let it marinate for at least 10 minutes.
While the salmon is marinating, place the panko breadcrumbs in a separate bowl.
Once marinated, take each piece of salmon and dip it into the panko breadcrumbs, pressing gently to ensure an even coating.
In a skillet over medium heat, add the vegetable oil. Once hot, add the breaded salmon bites in batches, ensuring not to overcrowd the pan. Cook until golden and crispy, about 2-3 minutes per side.
Alternatively, you can bake the salmon bites in the preheated oven for about 10-12 minutes, or until golden and cooked through.
Once cooked, remove the salmon bites from the skillet or oven and place them on a serving platter.
Garnish with sliced green onions and sesame seeds, if desired.
Keep the oven on warm if you need to cook in batches to ensure the salmon bites remain hot before serving.
