  • 2.5 pound beef chuck roast you can use anything between 2-3 pounds
  • 1 packet onion soup mix
  • 1 Tablespoon vegetable oil
  • 1 packet brown gravy mix
  • ¼ cup red wine vinegar
  • mashed potatoes for serving, store bought or homemade
  • Garlic Texas Toast for serving
  • chopped fresh parsley or sliced green onions for garnish, optional

  • Cut the roast into 3-4 large pieces and pat dry.
  • Sprinkle a pinch of the onion soup mix over all sides of the roast pieces.
  • Heat vegetable oil in a skillet over medium-high heat, add the roast pieces, and sear for 2-3 minutes per side.
  • Spray the inside of a 5-6 quart crockpot with non-stick spray.
  • Place seared beef pieces in the crockpot and sprinkle remaining onion soup mix and brown gravy mix over the beef.
  • Pour in ¼ cup red wine vinegar, cover, and cook on low for 8 hours.
  • Shred the beef with two forks and return it to the pot to combine with the gravy.
  • Prepare mashed potatoes and Garlic Texas Toast according to package directions.
  • Serve beef on toast topped with mashed potatoes and drizzle with gravy. Garnish with parsley or green onions.

Notes

For best results, avoid lifting the lid while cooking. The longer it cooks sealed, the more tender the beef becomes.
