Ingredients
  

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch dressing mix (1 ounce)
  • 1 can cream of chicken soup (10.5 ounces)
  • 1 cup chicken broth
  • 8 ounces cream cheese softened
  • 1 cup shredded cheddar cheese
  • ½ cup chopped green onions for garnish
  • to taste salt
  • to taste pepper

Instructions
 

  • Place the boneless, skinless chicken breasts in the bottom of the Crock Pot.
  • In a mixing bowl, combine the ranch dressing mix, cream of chicken soup, and chicken broth. Mix well to combine.
  • Pour the ranch mixture over the chicken in the Crock Pot.
  • Cover and cook on low for 6 hours, or until the chicken is tender and cooked through.
  • After the cooking time is up, add the softened cream cheese to the Crock Pot. Stir until the cream cheese is fully melted and incorporated into the sauce.
  • Sprinkle shredded cheddar cheese on top and cover the pot for an additional 10-15 minutes, or until the cheese is melted.
  • Once done, taste and season with salt and pepper as needed.
  • Serve hot, garnished with chopped green onions.

Notes

For added vegetable nutrition, consider adding 1 cup of chopped carrots or broccoli to the Crock Pot.
Serve the creamy ranch chicken over rice, pasta, or with a side of vegetables to complete the meal.
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stove.
