- 3 cloves garlic minced
- 3 medium potatoes diced (about 2 cups)
- 1 cup carrots diced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 cups shredded cheddar cheese
- 1 cup milk

In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess grease and transfer it to the crockpot.
Add the diced onion, minced garlic, diced potatoes, and carrots to the crockpot with the ground beef.
Pour in the beef broth and Worcestershire sauce, then sprinkle the dried thyme over the top. Stir to combine all ingredients.
Cover the crockpot and cook on low for 6 hours or on high for 3 hours, until the vegetables are tender.
About 30 minutes before serving, stir in the shredded cheddar cheese and milk. Mix well until the cheese is melted and fully incorporated.
Taste and season with salt and pepper as needed.
Ladle the soup into bowls and add optional toppings if desired.
Feel free to customize the ingredients by adding other vegetables like bell peppers or corn.
For a creamier texture, you can blend part of the soup with an immersion blender before adding cheese.
Store any leftovers in an airtight container in the fridge for up to 3 days; reheat on the stovetop or in the microwave.
