- 4 medium potatoes, diced (approximately 2 pounds)
- 1 cup diced onion
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 cup shredded cheese (optional, for serving)
