Heat a skillet and brown ground beef and Italian sausage until no longer pink. Drain excess grease.
Add diced onion and minced garlic to skillet. Sauté until fragrant and onion turns translucent.
In a bowl, whisk cream of chicken soup, milk, salt, pepper, garlic powder, and red pepper flakes.
Spray the inside of the crockpot with nonstick spray.
Layer half the sliced potatoes on bottom of crockpot. Add half the meat mixture and half the soup mixture.
Repeat with remaining potatoes, meat, and soup mixture. Keep layers even.
Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
Stir mixture to ensure everything is submerged and cooking evenly.
Top with shredded cheese and cook for an additional 15 minutes until cheese melts.
Serve warm and enjoy!
Notes
You can prep this overnight or freeze leftovers for easy future meals. Add veggies near the end to avoid mushiness.
