  • 4 lbs russet potatoes cleaned and sliced to ¼ inch thick
  • 1 lb ground beef
  • 1 lb Italian sausage
  • 1 sweet onion diced
  • 4 cloves garlic minced
  • 2 cans cream of chicken soup
  • 1.5 cups milk
  • ½ tsp each salt, pepper, garlic powder, red pepper flakes
  • 2 cups cheddar cheese shredded
  • nonstick cooking spray

  • Heat a skillet and brown ground beef and Italian sausage until no longer pink. Drain excess grease.
  • Add diced onion and minced garlic to skillet. Sauté until fragrant and onion turns translucent.
  • In a bowl, whisk cream of chicken soup, milk, salt, pepper, garlic powder, and red pepper flakes.
  • Spray the inside of the crockpot with nonstick spray.
  • Layer half the sliced potatoes on bottom of crockpot. Add half the meat mixture and half the soup mixture.
  • Repeat with remaining potatoes, meat, and soup mixture. Keep layers even.
  • Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are tender.
  • Stir mixture to ensure everything is submerged and cooking evenly.
  • Top with shredded cheese and cook for an additional 15 minutes until cheese melts.
  • Serve warm and enjoy!

Notes

You can prep this overnight or freeze leftovers for easy future meals. Add veggies near the end to avoid mushiness.
