  • 500 g all-purpose flour
  • 75 g granulated sugar
  • 0.5 teaspoon salt
  • 2 teaspoons ground cardamom
  • 25 g fresh yeast or 7g dry yeast
  • 300 ml whole milk lukewarm
  • 75 g unsalted butter melted
  • 1 egg
  • 1 egg beaten, for brushing
  • marzipan or custard filling

  • Mix flour, sugar, salt, and cardamom in a large bowl.
  • Dissolve yeast in lukewarm milk and pour mixture into the dry ingredients.
  • Add melted butter and the egg, then knead into a smooth, slightly sticky dough.
  • Cover the bowl and let dough rise in a warm place for about 60 minutes until doubled in size.
  • Transfer dough to a floured surface and roll out to 1 cm thick.
  • Cut into 4-inch squares and place spoonful of marzipan or custard in the center of each.
  • Fold corners over filling and pinch to seal. Place seam-side down on a lined baking sheet.
  • Cover and let rise for 30 more minutes.
  • Preheat oven to 200°C (390°F).
  • Brush buns with beaten egg.
  • Bake for 12-15 minutes until golden brown.
  • Cool on wire rack and enjoy warm.

Notes

Store in an airtight container up to 3 days or freeze for longer. Reheat by steaming or warming in oven wrapped in foil.
