Start by preparing your chicken. Flatten the chicken breasts to an even thickness using a meat mallet. Season both sides with salt, pepper, garlic powder, and paprika.
Set up a breading station with three shallow dishes: one with flour, one with beaten egg, and one with breadcrumbs.
Dredge each chicken breast first in flour, shaking off the excess. Then, dip into the egg, allowing any excess to drip off. Finally, coat with breadcrumbs, pressing gently to adhere.
Heat a skillet over medium heat and add enough oil to cover the bottom. Once hot, carefully add the breaded chicken breasts.
Cook the chicken for about 5–7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is golden brown and crispy. Remove from the skillet and let rest for a few minutes before slicing.
In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, red onion, and shredded carrots.
In a separate small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, and honey until emulsified. Pour the dressing over the salad and toss to combine.
Slice the chicken and place it on top of the salad. Garnish with optional feta cheese or avocado if desired.
