Ingredients
  

  • 1 lb smoked sausage (such as kielbasa or andouille), sliced
  • 1 cup long-grain white rice
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • Salt, to taste
  • Chopped parsley, for garnish (optional)

Instructions
 

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  • Add the diced onion and bell pepper to the skillet. Cook for about 3-4 minutes until the vegetables are softened.
  • Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  • Add the rice to the skillet and stir well to coat it with the sausage and vegetable mixture. Cook for 2 minutes to lightly toast the rice.
  • Pour in the chicken broth and add the diced tomatoes, paprika, oregano, black pepper, and salt to taste. Stir everything together and bring to a simmer.
  • Reduce the heat to low, cover the skillet, and let it cook for about 20 minutes or until the rice is tender and has absorbed most of the liquid.
  • Once cooked, remove from heat and let it sit for 5 minutes before serving. Fluff the rice with a fork and garnish with chopped parsley if desired.

Notes

Feel free to customize this recipe by adding your favorite vegetables, such as peas, corn, or spinach.
For added heat, you can include red pepper flakes or jalapeños.
