Instructions
Place eggs in a saucepan and cover with cold water until fully submerged.
Bring water to a boil over medium heat, then remove from heat, cover, and let sit for 10 minutes.
Transfer eggs to ice water bath for 5 minutes to cool and stop cooking.
Peel eggs and slice in half lengthwise. Set whites aside and collect yolks in a bowl.
Mash yolks with a fork until smooth.
Stir in mayonnaise, Dijon mustard, vinegar, hot sauce, paprika, salt, and pepper until creamy.
Fold in diced celery, green onion and Cajun seasoning gently.
Spoon or pipe yolk mixture into egg whites. Chill until ready to serve.
Notes
Keep deviled eggs chilled and serve within 2 days for best flavor and texture.
