- 1 lb ground beef
- 1 can (15 oz) black beans drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (8 oz) cream of mushroom soup
- 2 cups (8 oz) shredded cheddar cheese
- 4 cups (about 8 oz) crushed Doritos
- 1 packet (1 oz) taco seasoning
- 1 cup (240ml) sour cream
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease if necessary.
Stir in the taco seasoning, black beans, diced tomatoes (with juices), and cream of mushroom soup. Mix well until everything is combined and heated through, about 3-4 minutes.
In a large baking dish, spread a layer of half the crushed Doritos on the bottom.
Pour half of the beef mixture over the Doritos, followed by half of the sour cream and half of the shredded cheese.
Repeat the layers with the remaining Doritos, beef mixture, sour cream, and cheese.
Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the cheese is melted and golden.
Remove from the oven and let it sit for a few minutes before serving. Garnish with optional toppings if desired.
