  • ½ cup whole cranberries fresh or frozen
  • 1 medium orange zest and juice, about ¼ cup total
  • 2 tablespoons granulated sugar to bring out that sweet kick
  • 1 pinch coarse salt just enough to balance things
  • 2 tablespoons oil for searing the turkey
  • 1 boneless skinless turkey breast 2 to 3 pounds
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • fresh rosemary and/or thyme sprigs for herbal flavor

  • Preheat oven to 375°F if using Dutch oven both on stove and in oven, for optimal searing.
  • Combine cranberries, orange zest and juice, sugar, and a pinch of salt in a small saucepan. Simmer on medium heat until berries burst and glaze thickens, about 10 minutes. Set aside.
  • Pat turkey breast dry. Rub with oil, then season with coarse salt and pepper.
  • Sear turkey on all sides in Dutch oven over medium-high heat until golden brown, about 4–5 minutes per side.
  • Remove from heat, spoon cranberry orange glaze over turkey, and tuck rosemary or thyme sprigs around.
  • Cover with lid and roast in oven until internal temp reaches 165°F, about 25–30 minutes.
  • Remove from oven and let rest for 10 minutes before slicing. Serve with remaining glaze.

Notes

You can substitute dried herbs if fresh aren’t available, and frozen cranberries work just as well as fresh. Prep ingredients the night before for less stress on cooking day.
