Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
Beat in the egg and vanilla extract until well combined.
In another bowl, whisk together the flour, baking powder, ground cinnamon, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
Turn the dough out onto a lightly floured surface and roll it out to about 5mm thickness.
Use cookie cutters to cut out biscuits in your desired Easter shapes.
Place the biscuits on the prepared baking sheet, spacing them apart.
Bake in the preheated oven for 10-12 minutes, until they are lightly golden around the edges.
Remove from the oven and allow the biscuits to cool on the baking sheet for a few minutes before transferring them to a cooling rack.
Once cooled, decorate with icing and sprinkles if desired.
Store the biscuits in an airtight container for up to one week to keep them fresh.
